Christmas Baking



During the Winter Holidays baking is literally the only thing I do. I love experimenting with new recipes and tasting the final results. The two recipes I tried this week came out so well I thought I just might just feature them on the blog for you guys to try out. 

Chocolate Cookies 

Here's what you'll need:

3/4 cup butter  
1 1/2 cups brown sugar
2 tablespoons water
2 cups chocolate chips
2 eggs
2 1/2 cups all-purpose flour
1 1/4 teaspoons baking soda
1/2 teaspoon salt 
1 chocolate bar 

1. Put sugar, butter and water in a saucepan over medium heat and stir until melted. Remove pan from heat and add the chocolate chips, stir the mixing until melted; after it's melted set aside to cool for 10 minutes. 
2. Pour chocolate mixture into a large bowl, add eggs one by one. Pour in flour, baking soda and salt, into the chocolate mixture and mix it well. Cover and refrigerate for 1 hour.
3. Preheat oven to 350 degrees F (175 degrees C). Make walnut sized balls with dough and place them apart onto the greased sheets
4. Bake cookies for 8 to 10 minutes. When you take them out of the oven press a piece of chocolate onto the cookie, let it melt and swirl the chocolate with a fork to make it even. 
5. All done! Enjoy! 

Chai with Soy Milk 


Here's what you'll need:


3 cups water
1 teaspoons cardamom 
5 whole cloves
2 cinnamon sticks
1 slice of ginger, peeled and quartered 
1/2 vanilla bean, split lengthwise and scarped 
1/3 cup honey
4 black tea bags 
1 1/2 cups soy milk

1. Put water in a saucepan, add cardamom, cloves, cinnamon, ginger and vanilla bean and scrapings. Bring to a boil on high heat. 
2. Reduce to low heat and leave it sit for about 15 minutes. Add honey and drop tea bags in pan; turn off heat and let it steep for 3 minutes. 
3. Strain tea through a strainer. Heat the soy milk in the same pan over medium-high heat for about 3 minutes (do not let it come to a boil, because the milk will separate). Pour tea and soy milk into your mug and stir well. Now it's ready to serve! Delicious!
